POST WORKOUT SMOOTHIE

Bart loves this new smoothie recipe. With each ingredient serving its purpose it’s well put together to create a delicious post workout treat. And it’s a fun change for your average protein shake.

SMOOTHIE:

1 Small Banana (provides potassium)

1/2 cup crushed pineapple (rich in vit. c)

1 cup of skim milk (i used one cup of ALMOND MILK)

1 sliced peach (provides carbs)

1 tsp of frozen Orange juice

1/2 scoop of your protein powder

BLEND TOGETHER add a few ice cubes and keep cold for after your work out.

Sorry My blog has been slacking…it’s such a busy time and I’m busy doing new ventures! There are some really exciting things to come for myself and Bart and I will be happy to share summer time stories, recipes, Vegas trips etc! I hope everyone is enjoying the beginning of the best time of the year SUMMER!!! I’m currently taking on a new job, training for a 5k and taking care of my fam. and couldn’t enjoy it more!

{Memorial Weekend Recipes}

Here are a few recipes to try this weekend!

{Summer Stir-Fry}

INGREDIENTS:

2 tablespoons peanut oil

1 bunch asparagus, blanched and sliced into 2-inch pieces

1 each green, red, yellow pepper, thinly sliced

1 bunch garlic shoots, sliced into 2- inch pieces

2 carrots, julienned into 2- inch pieces

1 round fresh ginger, minced

4 tablespoons low-sodium soy sauce

1 teaspoon cornstarch mixed in 1 tablespoon water

3 tablespoons sherry

Clean and prepare veggies, so they are all the same size and thickness. In a separate bowl mix cornstarch and water. Add soy and sherry.

Put peanut oil in wok. When very hot, add ginger and garlic shoots. Add rest of veggies and tossing like a salad, stir-fry until tender crisp. Add soy sauce mixture. Serve hot over rice or as a side dish.

{PICKLES}

INGREDIENTS:

2 small cucumbers, sliced in discs

1 tablespoon sugar

1 teaspoon kosher salt

Slice small cucumbers into discs. Toss with the salt and sugar. Refrigerate for a few hours or the afternoon. Serve cold.

{Lemon Frozen Yogurt with Raspberries}

INGREDIENTS:

3 cups plain strained  regular yogurt, or greek yogurt

1 to 1 1/2 cups sugar (to taste)

1 cup lemon juice

1 tablespoon lemon zest

Makes about 1 1/2 quarts, or about 12 regular Popsicle’s

To get the truest yogurt flavor, use plain yogurt, not vanilla-flavored or any other flavor, and with as little sugar added as possible. Regular yogurt contains quite a bit of water, so if you use it straight the frozen yogurt can become hard and icy. To prevent this, regular yogurt should be strained. You can place the yogurt into a cheesecloth-lined strainer or colander and place over a bowl. Fold the cheesecloth around the yogurt and place the whole setup into the refrigerator overnight to let the yogurt drain. You will need more than 3 cups of regular yogurt to yield 3 cups after it’s been strained. Or, you can use Greek yogurt, which has already been strained and is thick and creamy. The more fat the yogurt contains, the richer the frozen result will be, naturally, but the 2% yogurt I used yielded quite excellent results and it’s not necessary to use full-fat yogurt (not to mention it might negate its touted healthfulness!)

Combine all the ingredients in a bowl and stir together until the sugar is dissolved. Refrigerate the mixture for a couple of hours until it is thoroughly chilled.

Freeze in an ice cream maker per manufacturer’s instructions.

When it has reached the consistency of soft serve, you can either scrape into a container and freeze overnight, or divide among popsicle molds and then freeze overnight. You can swirl the raspberries into the mixture before you freeze the yogurt. If you are making popsicles, you may want to cut the raspberries into pieces so you don’t have large frozen berries in the pops. (www.dessertfirstgirl.com)


Celery Burgers

INGREDIENTS:

2 lbs of ground beef (or turkey)

5-6 stalks of celery

Salt/pepper

1/2 onion chopped

1 tbsp. Worcestershire sauce


PUT ground beef in a large bowl. Chop celery into fine pieces. Add all ingredients to the beef and make into patties. You can add an egg to help them stick together, also bread crumbs!

Adding Celery to the burger adds volume and cuts down on the amount of fat in each burger.

Summer Salad

INGREDIENTS:

3 cups greens, such as kale, spinach, collard greens and/or Romain lettuce

1 red pepper, julienned

1 green pepper, julienned

3 carrots, julienned

2 fresh beets, julienned

2 fresh radishes, julienned

2 green onions, thinly sliced

DRESSING:

1/2 cup jalapeno orange jam (alternative sub. with orange jam or marmalade & red pepper flakes.

1/2 cup buttermilk                            1/2 cup light mayo

1/2 cup sour cream                           1/4 cup red wine vinegar or lemon juice

sugar, salt and pepper to taste.

MIX dressing ingredients together and chill. Meanwhile, clean and rinse veggies and julienne. To slice greens, roll up lengthwise and slice chiffonade style. Mix with dressing. Serve chilled.
