Mother’s day Field Trip
My daughter’s class went on a field trip for mother’s day this year. We took the train from Crystal Lake to Woodstock (which if you don’t know the area, that’s a 10 min train ride) When we got to historic downtown Woodstock (where Groundhogs day was filmed) we walked to a local florist and the kids picked a flower for their mom. We got back on the train and went 10 min back to Crystal lake and the kids got us popcorn (or the kids got popcorn for themselves ha!) It was so much fun and Natalia was stoked to go on a train ride!
Hawaiian Chicken & Veggies
I’ve been experimenting with Marinades lately and was inspired by the “Hawaiian” Marinade to make some veggies with Pineapple! This turned out so delicious!
VEGGIES TO USE (and one fruit):
Pineapple
Carrots
Onion
Tomatoes
Cook all in a pan and add Hawaiian marinated chicken!
Oatmeal-Brown Sugar baked apples
Oatmeal-Brown Sugar Baked Apples
Serves 4
4 apples
1/4 cup brown sugar (dark or light)
1/4 cup oatmeal
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Pinch cloves
1 Tablespoon butter, divided in four
1 cup hot water
Optional Extras: orange zest, lemon zest, grated ginger, raisins or other dried fruit, chopped nuts
Pre-heat oven to 375-degrees.
Remove the core of the apples, cutting to within a half inch of the bottom of the apple. This is easy to do with an apple corer, but can also be done with a melon baller, grapefruit spoon, or a paring knife. The idea is to create a well inside the apple about 3/4 inch wide.
Mix the brown sugar, oatmeal, cinnamon, nutmeg, cloves, and any extras in a bowl. Divide this mixture between the apples and pack it into the wells.
Arrange the apples in a baking dish (an 8×8 Pyrex dish works well), and top each one with a pat of butter. Pour the water into the bottom of the dish and cover loosely with aluminum foil.
Bake for 20 minutes and remove foil. Continue baking uncovered until the apples are baked through and the brown sugar has melted into a syrup, an additional 20-30 minutes.
Test for doneness by poking a knife into the apple through the center well. It should slide easily with no resistance. The skin on the apples will also become wrinkled and soft by the end of cooking.
Serve with a scoop of ice cream or whipped cream. (www.thekitchn.com)
Why I Blog
I often ask myself this question. Why do I blog? Well why do you update your Facebook status? Same reason, we want the world to know what we are going through. Is it because we love instant gratification? Maybe. When I started this website my husband was going into his Second to last fight in the WEC, now it has merged with the infamous UFC and he will be making his Debut May 28 ( two days before his 28 birthday)
When people ask about this accomplishment its pretty hard to describe. I guess you can simply imagine working 10 long hard years to meet a goal and then boom it happens. Surreal yes, unfathomable no.
So what happens next? You meet your goal of living in your dream, now you have to keep your dream alive. Pressure? Um yes. Unrealistic no.
The ways that wives can help their significant other feel comfortable in this dream is to be positive. I think we forgot sometimes that how important it is to just be ourselves everyday and wear a smile. Instead of getting mad that someone left the toilet seat up, or that you didn’t turn the coffee pot off.
Your positivity will rub off on others, you can only be the best you, and that’s it. Once you recognize that you can not control all situations but your individual one, you will be free!
DIY Jewelry Box
We were invited to a 4 year old little girls Birthday Party and I really wanted to hand-make something special. I started browsing Etsy for some Ideas and I found a beautifully painted jewelry box. I Knew that If I got a similar box from Michael’s I could mimic the design. Well It turned out pretty good, and I hope she loves it. Natalia and I also made her a necklace and put some little peace patches and socks in her new special box! Happy Birthday Vylet!
I used acrylic paint and a paint marker just to write her name. <3
