What to make for dinner, when your Brain is mush!?!

I’ve been working more to help fund my trip to Las Vegas. I knew that after providing Massage Therapy to my lucky clients all day would make me exhausted and that when I got home I’d be slacking on dinner. Well I don’t really think that’s been the case. I find that coming home and cooking is very therapeutic. It helps me unwind from my day and I know I’m putting something healthy in my body, which is what our body naturally wants after a hard day’s work (healthy food! with nutrients)

Try this:

Grilled chicken Breast

Homemade Sweet Potato Fries- Wash sweet potato, cut into thin pieces, sprinkle with a little olive oil and salt. Bake in Oven for 35 minutes at 400 degrees

Green Bean with mushrooms- Steam Green beans. IN a separate pan heat olive oil and add mushrooms and onion. When beans are steamed add to mushrooms/onion mixture. When nearly cooked all the way at 1/4 cup of bread crumbs.

Cooking in Cardigans

I joke that I will have a cooking show, and I will cook in a cardigan. Same way Mr. Roger’s enlightened us in his Cardigan. Here are some slick looking threads…

Tilapia w tomatoes and basil

INGREDIENTS:

  1. Tilapia
  2. minced garlic
  3. 2 Tomatoes
  4. Fresh Basil
  5. Burgundy wine
  6. salt and pepper

Heat oven to 425 degrees

Place tilapia in foil (add olive oil so it doesn’t stick) sprinkle with salt and pepper.

Cover tilapia with minced garlic and chopped tomatoes. ADD fresh basil

Make a little pouch with the foil and add the wine. SEAL foil. Cook for 14 minutes, or until flakes with fork.

DIY >> Easter Bags

I got this Idea from the DIY inspiration post. These bags were so much fun to make. I used brown paper bags, paint markers and acrylic paints. The chick turned out much better than I thought too. Be creative with your scissors and you can transform a paper bag! I had all the supplies so these bags didn’t cost me anything ;)

Thyme Fries

INGREDIENTS:

  1. 1/2 cup olive oil
  2. 1 Large Potato, sliced into long strips
  3. 1/2 TSP coriander seeds
  4. 1/2 TSP cumin seeds
  5. 1/2 TSP mustard seeds
  6. 1 sprig Thyme
  7. Salt and pepper

Preheat oven to 375.

Place potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.

Bake for about 20 min.

Heat two tablespoons of olive oil in a pan on high heat. Add the spices and let them infuse in the oil for 20 seconds.

Add the potatoes; toss them with some thyme.

Saute for about a minutes add salt to taste.  (Makes 2 servings)

Zucchini Hummus Pizza

Recipe I’d like to try…

INGREDIENTS:

  1. 6 inch round puff pastry
  2. 1 cup chickpeas
  3. 1/4 cup olive oil
  4. Salt and pepper
  5. 1 Thai bird chili
  6. 2 cloves of garlic
  7. 1 TBSP olive oil
  8. 2 TBSP of wasabi peas

First Bake the puff pastry at 350 degrees about 15 min.

Blend chickpeas, olive oil, salt, pepper, Thai bird chili, and garlic in food processor to make the hummus. Spread 1 tablespoon of hummus on the pastry.

Saute the zucchini in olive oil for 3 to 5 min. Add salt and pepper. Pan out the zucchini on the hummus such that it completely covers the hummus. Bake for 3 to 5 min.

Crumble wasabi peas, sprinkler over top, and serve warm.
